Well, you have come a long way to consider opening your own facility. The logical approach is to measure the demand for Yoga in your area. Ask the gym owners to try a few Open House promotions for your classes to the general public.
One way to do this is to have a special discount on an appointed day. For Example: "Open House in the Yoga Studio of Gold's Gym." Buy one class get one free. Bring a friend free. Yoga classes for only $5 walk-in on March 3, 2008. With special promotions you can tap into a larger market to find out if there is enough interest.
When all of your classes are completely packed, you should then think about opening a Yoga studio. Although, some gym members will not follow you, because you are a just part of the membership package.
The idea of a partnership is great. Especially, because she is the only Yoga teacher beside you. You would make a strong team, but you should still measure the demand for Yoga in your area. Best of luck!
