Your technique is one of my favorites. It is tried, tested, solid and many teachers show the same method. Ujjayi (victory breath) is sometimes called ocean breath or ocean sounding breath. The Sanskrit translation of Ujjayi is "victory breath" because it is the victory of union and transformation.
To create the classic sound with the mouth open, contract your throat to 1/2 of the diameter. This will create the "aaaah" sound that is similar to the ocean, as you breathe in and out. After that, close the mouth, but be aware that the source of the sound is the throat and not the nasal passages.
