Namaskar Carina,
About fermented food especially vinegar: Some of the old Yogis don't want to reform. It runs parallel to some religious dogma. We know that vinegar and good quality oil, like virgin olive is good for the digestive and elimination systems. This is modern dietary science, but the established Yogis are old men and very set in their ways.
About Eggs: Traditionally, Yogis avoided eggs because they were found in the wild and were usually fertilized. This is much different from from modern stores that supply us with unfertilized eggs.
However, one large egg can contain more than the entire days recommended maximum intake of 300 mg cholesterol. Hence, eat eggs in extreme moderation. Due to the cholesterol levels, egg whites seem like a substitute for the real thing once in a while.
Om Shanti,
Priyah
