Namaskar Carina,

I understand the confusion. The purely Sattvic diet is too cooling for northern climates, especially during winter months. Hence, the reason for cooking, but not over cooking.

About onions and garlic: Some people believe that you should not eat root crops because you are eating the life of the plant.

Bitter and sour food: In ancinet times food that smelled like vinegar could kill you. For example the smell of rotten meat. The ancients made this association with anything that had a sour smell.

Any food in moderation is fine. Enjoy coffee or wine, but just don't over do it.
